Two Decades of Deliciousness

Ben Hamrah and Amanda Elliott, owners of Beet Box located on Fay Street and pictured above, will soon be taking over Hoss’s Market and Rotisserie. According to the new owners, Hoss’s will continue to have its own identity and not be seen as “Beet Box 2.”

In an Inside Columbia article depicting Columbia’s dining scene, Trish Koetting explains their years in the restaurant business. Hoss worked for Dick Walls in the 1980s. “My husband,” Trish says, “Hoss, whose real name is Jim, started at Boone Tavern as a cook in 1983.” Trish started there as a cocktail waitress until later becoming general manager of another one of Walls’ restaurants, called The Smokehouse. After Hoss and Trish had worked at Walls’ restaurants for more than 30 years combined, they decided to open their own place, Hoss’s Market, in 2002.

Trish is grateful to patrons for their support both on their personal journey and in their patronage of the market. “After 38 years on the Columbia restaurant scene between Boone Tavern and Hoss’s Market, we are ready to rest,” she says. “We are so blessed by the outpouring of support from this community. Simply amazing!”

While the Koettings will step away from the daily grind of the market, they will continue to sell the seasonings. “Hoss developed the line of seasonings when we opened 20 years ago,” Trish says. “They will continue to be used in cooking and smoking at Hoss’s Market and sold here for retail.
