Rex Scott didn’t plan on starting a food truck business.
“We were in college in Jefferson City and came up with the idea to sell Jamaican food, because there isn’t any around here,” says Scott, now the co-owner of Jamaican Jerk Hut. “We got together every Tuesday and cooked together, then that evolved into kind of a block party, and then we realized a food truck was the way to go because it gives us flexibility in location and schedule.”
Scott’s favorite part has nothing to do with the food. “It has to do with interactions with people from different walks of life. For me, serving Jamaican food is representative of me giving someone a window into our culture. While the food is the main draw, we hope that we impart more than just a meal.”
